Sausage, Peppers And Onions
- 3/4 lb sweet or hot Italian sausage links
- 1 red bell pepper, stemmed, seeded and cut into lengthwise 1/4-inch strips
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, coarsely chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 hero rolls, sliced lengthwise
- Fry the sausage in a large skillet over medium-low heat with a few drops water added to prevent the sausage from sticking. As the water evaporates, continue to fry, turning frequently, until the sausage is golden brown, about 15 minutes. Drain on paper towels and keep warm.
- Saute the bell pepper in the olive oil over medium heat until softened, 5 minutes. Add the onion and garlic, season with salt and pepper, and continue cooking until all of the vegetables are lightly browned, 10-15 minutes. Serve with the sausage on the rolls.
