Pasta With Spinach And Cheese
- 8 ounces radiatore pasta
- 3 cloves garlic, minced
- 2 shallots, minced
- 4 ounces sliced mushrooms
- 1 tablespoons olive oil
- 1 tablespoons lemon juice
- 1/2 pound fresh spinach, stems removed, rinsed of sand, and drained
- 2 tablespoons butter
- 1/2 cup pitted olives, chopped or sliced
- 2 ounces feta cheese, crumbled
- 1/2 cup cream
- 1/2 cup gruyere cheese
- 1 teaspoons wasabe powder
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/8 teaspoon black pepper
- In a large stockpot, cook the radiatore pasta according to package directions. Drain. In a 12-inch saute skillet, saute the shallots, garlic, and mushrooms in the olive oil. Pour the lemon juice in and stir. Add the spinach and allow to cook down. Add the butter, cream, olives, feta cheese, Parmesan cheese, and gruyere cheese. Allow the butter to melt. Mix well. Season with wasabe powder, salt, and pepper.
