Frosted Banana Nut Chocolate Chip Bread
- 4 medium very ripe bananas
- 4 eggs
- 3 cups sugar
- 2 sticks + 6 TBSP margarine
- or unsalted butter
- 1 6-oz container vanilla (or
- unflavored) low fat yogurt
- 2 TBSP Vanilla
- 2 TBSP Dark Rum
- 2 cups + 6 TBSP Flour
- 2 tsp baking soda
- 3/8 tsp salt
- 1/2 cup SemiSweet Chocolate
- Chips
- 3/4 cup chopped walnuts
- 1 TBSP additional flour
- FROSTING:
- 1/4 cup margarine or butter
- (softened)
- 1/2 cup brown sugar
- 1/2 cup coconut
- 1/2 cup chopped walnuts
- 1 TBSP milk
- 1. Preheat oven to 350-degrees
- 2. Mash bananas lightly and put aside until later
- 3. In a food processor, add eggs, sugar, & butter and process just until mixed
- 4. Add yogurt, vanilla, and rum and process for several seconds until just mixed
- 5. In a separate large mixing bowl combine flour, baking soda, and salt & mix well.
- 6. Add flour mixture to processor and process just until ingredients are completely combined and fluffy. DO NOT OVER PROCESS!
- 7. Pour flour & egg mixture back into the large mixing bowl.
- 8. Gently fold in mashed bananas
- 9. In a medium sized mixing bowl add the chocolate chips, nuts, and 1 tbsp flour. Toss until nuts & chips are coated.
- 10. Add chocolate chip & nut mixture to the banana, flour & egg mixture in the large bowl and gently mix together.
- 11. Spoon batter into two GREASED & FLOURED loaf pans
- 12. Bake approximately 45 - 55 minutes or just until cake bounces bake when pressed in the center.
- 13. Cool cake in pans for 10 -15 minutes then remove and place both loaves on a large baking sheet
- 14. Mix frosting ingredients together and spread over loaves
- 15. Broil frosted loaves for 1 to 1-1/2 minutes watching the loaves carefully to be certain they do not burn
