Cannelloni

  1. Heat olive oil in large skillet.
  2. Add onions and garlic, cook over moderate heat.
  3. 7 - 8 minutes.
  4. They will be soft, but not brown.
  5. Add dried spinach, stirring constantly and cook 3 - 4 minutes.
  6. When the moisture is cooked away and spinach sticks lightly to the sides of the pan, transfer it to a large mixing bowl.
  7. In the same skillet melt 1 tablespoon butter and lightly brown the ground beef.
  8. Add to spinach mixture.
  9. Add to all the above spinach, meat mixture 5 tablespoon Parmesan cheese, 2 tablespoons heavy cream, the eggs, oregano, salt and pepper.
  10. Mix well and set aside.
