Cannelloni
- 2 tablespoons Olive Oil
- 1/4 cup chopped onion
- 1 tablespoon finely chopped garlic
- 1 10 oz. pkg. frozen chopped spinach (thaw, squeeze dry, chop drain)
- 1 Tbsp. butter
- 1 pound ground round
- 5 Tbsp parmesan cheese
- 2 Tbsp heavy cream
- 2 eggs, lightly beaten
- salt and pepper to taste
- Heat olive oil in large skillet.
- Add onions and garlic, cook over moderate heat.
- 7 - 8 minutes.
- They will be soft, but not brown.
- Add dried spinach, stirring constantly and cook 3 - 4 minutes.
- When the moisture is cooked away and spinach sticks lightly to the sides of the pan, transfer it to a large mixing bowl.
- In the same skillet melt 1 tablespoon butter and lightly brown the ground beef.
- Add to spinach mixture.
- Add to all the above spinach, meat mixture 5 tablespoon Parmesan cheese, 2 tablespoons heavy cream, the eggs, oregano, salt and pepper.
- Mix well and set aside.
