Perfect Potato Salad
- 5 lbs. Red Skin Potatoes (uniform size)
- 1 medium Red onion, chopped
- 1 bunch green onions, thinly sliced
- 2 tsp. salt or to taste
- 1 bunch chives
- fresh ground pepper to taste
- Dressing:
- 3 tbs. red wine vinegar
- 3 tbs. olive oil
- 2 cups mayonaisse
- 1/3-1/2 milk
- 1. Boil Potatoes 30 minutes or until tender.
- 2. Drain and cool potatoes (can be refrigerated overnight).
- 3. Peel potatoes and quarter each potato, then slice into 1/4 inch slices.
- 4. Add chopped red and green onions, salt and pepper, then toss with potato slices.
- 5. Fold in dressing (dressing prep. instructions below)
- 6. Chill for approx. 2 hours before serving.
- 7. Garnish with chives
- Dressing:
- 1. Wisk all ingredients together; consistency should be of a thick sauce but pourable.
