Perfect Potato Salad

  1. 1. Boil Potatoes 30 minutes or until tender.
  2. 2. Drain and cool potatoes (can be refrigerated overnight).
  3. 3. Peel potatoes and quarter each potato, then slice into 1/4 inch slices.
  4. 4. Add chopped red and green onions, salt and pepper, then toss with potato slices.
  5. 5. Fold in dressing (dressing prep. instructions below)
  6. 6. Chill for approx. 2 hours before serving.
  7. 7. Garnish with chives
  8. Dressing:
  9. 1. Wisk all ingredients together; consistency should be of a thick sauce but pourable.
