Chicken Curry
- 3 lb. chicken pieces
- 3/4 c. chopped onion
- 1/2 c. chopped celery
- 1 tsp. minced garlic
- 2 Tbsp. curry powder
- 1 bay leaf
- 1 c. cubed apples
- 1/3 c. diced banana
- 1 1/2 c. chicken broth
- 1/2 c. heavy cream or yogurt
- Sprinkle chicken pieces with salt and pepper.
- Melt 4 tablespoons of butter in skillet.
- Add chicken pieces and cook 5 minutes on one side until golden.
- Add onion, celery, garlic and curry powder.
- Stir well and cook 5 more minutes.
- Add bay leaf, apples and banana and cook 5 more minutes, stirring gently.
- Add chicken broth and simmer 15 minutes or until chicken is tender. Remove chicken pieces and stir cream or yogurt into sauce.
- Return chicken to sauce.
- Serve with rice.
