Donna'S Super Simple Veggie Chili
- 1 can light red kidney beans
- 1 can dark red kidney beans
- 1 can black beans
- 1 large can diced tomatoes
- 1 large can crushed tomatoes
- 1 can chili-seasoned Rotel
- 1 can black olives, sliced
- 1 16-oz pkg frozen mixed vegetables
- 1 pkg Williams chili seasoning mix
- 1 medium onion
- 1 large yellow pepper
- mushrooms (lots!)
- > Cut up onion, pepper, and mushrooms.
- > Open all the cans.
- > Drain the kidney beans, but not the black beans.
- > Mix everything well in large pot.
- > Cook an hour or so on low to medium heat.
- > Serve, and embellish with whatever you like!
- (i.e., cheese, sour cream, fritos, etc.!)
