North Woods Bean Soup
- 1 c baby carrots, halved
- 1 c chopped onion
- 2 garlic cloves, minced
- 7 oz smoked sausage, halved and cut into 1/2" pcs.
- 4 c fat-free broth
- 1/2 tsp dried Italian seasoning
- 1/2 tsp black pepper
- 2 15.8 oz cans Great Northern beans, drained and rinsed
- 1 6 oz bag fresh baby spinach
- 1. Heat large saucepan coated with cooking spray over med-high heat. Add carrots, onion, garlic, and sausage, saute 3 min, stirring occasionally. Reduce heat to med, cook 5 min. Add the broth, seasoning, pepper, and beans. Bring to boil, reduce heat, and simmer 5 min.
- 2. Place 2 c of soup in food processor or blender, and process until smooth. Return mixture to pan. Simmer additional 5 min. Remove soup from hyeat. Add spinach, stiring until spinach wilts.
