Vegan Banana Bread
- -5 tbsp Earth Balance soy butter
- -1/3 cup sugar
- -2 cups whole wheat flour
- -1 1/2 tsp baking powder
- -1/2 tsp baking soda
- -2 ripe bananas
- -1 tbsp agave nectar
- -1 tsp pumpkin pie spice
- -1/2 cup soy milk
- -Preheat oven to 350u0b0
- -Melt soy butter in a small microwave-safe bowl (~4 seconds in microwave, or until very soft)
- -Mix butter and sugar in larger bowl (a whisk works best)
- -Add in flour, baking soda, baking powder, and pumpkin pie spice
- -In separate bowl, mash bananas with agave nectar with a fork (If the bananas are not ripe, add a bit more agave nectar and heat bananas in microwave for ~30 seconds to make mashing easier)
- -Add mashed goodness and soy milk to other ingredients, mix well (again, whisk)
- -Transfer to greased loaf pan
- -Bake for ~50 minutes, test with fork
