Shoe Peg Corn & Green Bean Casserole
- 1 can (11 oz) shoe peg corn (drained)
- 1 can (14.5 oz) French style green beans (drained)
- 1 (8oz) container sour cream
- 1 can (19.75 oz) cream of celery soup
- 1/4 cup chopped celery
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1 cup shredded cheddar cheese
- salt & pepper to taste
- 1 stick of butter...melted
- 1 stack of Ritz crackers
- Preheat oven to 350 degrees F (175 degrees C).
- Combine onion, celery, green pepper, cheese, corn, green beans, soup and sour cream in a 2-quart casserole dish...season to taste
- Combine crushed crackers with melted butter and sprinkle on top of vegetables.
- Bake in preheated oven for 35 minutes.
