White Chocolate Macadamia Nut Cookies
- 3 cups flour
- 1 teaspoon baking soda
- pinch of salt
- 1 cup (2 sticks) butter at
- room temperature
- 1-1/2 cups sugar
- 1 cup brown sugar, packed
- 2 large eggs, at room temperature
- 1/2 teaspoon pure vanilla
- 1/2 teaspoon almond extract
- 1/2 teaspoon Amaretto
- 2 cups white chocolate chips
- 1-1/2 cups Macadamia nuts,
- roughly chopped
- Sift the dry ingredients together. Cream the butter and
- sugars together in a separate
- bowl until light and fluffy; add eggs one at a time,
- blending well.
- Mix in the vanilla and almond extarcts,followed by Amaretto. Stir the dry ingredients in with
- a gentle touch.
- With a wooden spoon, mix in the white chocolate chips and nuts. Scoop onto prepared
- baking sheets, placing dough
- 2 inches apart. Bake cookies
- for 8 to10 minutes or until
- they are golden brown. Try to
- hold back the masses as the
- cookies cool and have plenty of milk on hand.
