Healthy Chocolate Cake
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp cinnamon
- 1/4 tsp salt
- 1 1/4 cups brown sugar, packed
- 1 egg
- 2 egg whites
- 3 tbsp canola or vegetable oil
- 1 tsp vanilla
- 1/4 tsp almond extract
- 1 cup low-fat sour cream
- 1/2 cup mini chocolate chips
- In small bowl, combine flour, cocoa, baking powder, baking soda, cinnamon and salt. Set aside.
- In medium bowl, mix together brown sugar, egg, egg whites and oil with an electric mixer on medium speed. Add vanilla, almond extract and sour cream. Beat on low speed until well blended.
- Gradually add flour mixture to sour cream mixture; beating on medium speed. Fold in chocolate chips.
- Bake in 8-inch lightly-greased baking pan at 350 degrees for 40 to 45 minutes or until toothpick inserted in centre comes out clean.
- Cool 15 minutes before cutting into 12 squares.
