Dark Fruit Cake
- 1/2 lb. candied cherries
- 1/2 lb. candied pineapple
- 1 lb. butter
- 1 lb. dark brown sugar
- 4 c. flour
- 1 lb. raisins
- 1 lb. figs
- 1/2 lb. citron
- 1 wine glass sherry, brandy or 1/3 c. any desired fruit juice
- 1 c. molasses
- 6 eggs
- 1 1/2 tsp. nutmeg
- 3 tsp. cloves
- 3 tsp. cinnamon
- 3 tsp. baking powder
- 1 1/2 lb. nut meats (pecans, walnuts, almonds or mixed)
- Cream butter and sugar.
- Add beaten eggs.
- Sift flour and measure.
- Take out 1 cup for dusting cut up fruit.
- Sift the rest with the spices and dry ingredients.
- Add flour mixture, fruit and nuts alternately with molasses and wine to egg and butter mixture. Mix well, using a large bowl.
- Hands do the best job.
