Walk Away Tomato Sauce
- 28 ounce can whole peeled tomatoes
- (I like Muir Glen)
- 3 T Butter
- 2 T Olive Oli
- 1 medium Onion, peeled and halved
- Big Pinch of Red Pepper Flakes
- 1 tsp Fennel Seeds
- 1 large clove of Garlic, minced
- 1 tsp Sugar
- Salt & Pepper
- Big handful of chopped fresh Basil (later)
- Pour everything above in a pot except basil
- Arrange the onions cut face down.
- Add one big stalk of basil leaves (whole)
- Bring to a simmer
- Cover with lid slightly ajar
- Allow to simmer for about 35-50 minutes, breaking up the tomatoes as they cook down
- Allow to cool slightly
- Remove the onions, pour in blender, and blend for 3-4 seconds, enough to break down tomatoes
- Add basil if desired
