Cajun Black Eyed Peas
- Black Eyed Peas:
- 1 tbsp olive oil
- 1 small medium onion chopped
- 1 clove garlic chopped
- 2 15 oz cans of black eyed peas
- 1 15 oz can of diced tomatoes
- 3 tsp cajun seasoning (more if you like spicer foods)
- Cajun Seasoning:
- 4 teaspoons paprika
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 2 teaspoons mustard powder
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon ground nutmeg
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon cumin powder
- Combine all seasoning ingredients in spice grinder or use a mortar and pestle. Use 3 tsp for black eyed peas. Store remaining spice mix in a tightly sealed jar. Makes 2 oz.
- Fresh Cilantro leaves
- Heat oil in a Dutch oven. Add onion and garlic, saute till soft. Add black eyed peas, tomatoes and cajun seasonings. Bring to a boil then reduce heat and simmer for 20 minutes over medium-low heat stirring occasionally. Garnish with cilantro.
