Talapia Suzette

  1. in large heavy skillet combine olive oil shallots and garlic, turn heat to medium and cook until transparent,then remove the veg. and keep olive oil . salt and pepper fish and add to medium heated olive oil. cook lightly on both sides, about a minute on each side, and remove to warm platter. add chicken stock and the rest of the seasonings and bring to a simmer, turn heat to very low and add sour cream and heat well and incooperate into stock , add fish , bring to slight simmer and cover for 3 to 5 min.adjust salt and pepper. serve over cooked angel hair pasta and top off with green onions.
