Billionaire'S Meatloaaf
- 4 T Butter
- 2 1/2 C chopped Onion
- 4 T minced Shallots
- 1 # sliced Mushrooms
- 2 T Brandy
- 1 T Salt
- 2 Eggs
- 1 # ground Beef Chuck
- 1 # ground Lamb
- 1 # ground Pork
- 3 T Dijon
- 1-1/2 T Tomato Paste
- 1 C Rolled Oats
- 1/2 C Beef Stock
- 1 C grated Cheddar
- 1 T minced Garlic
- 1 t Black Pepper
- 2-1/4 t dried Thyme
- 2 t Paprika
- 1-1/2 t dried Oregano
- 4-8 slices, parcooked bacon
- Melt butter. Saute onion and shallots until just soft.
- Add mushrooms and brandy, continue to saute until mushrooms are just soft.
- Beat eggs. Add remaining ingredients (except the bacon).
- Knead and form into a loaf on a parchment lined baking sheet.
- Place parcooked bacon in a crosshatch fashion over the top.
- Bake @ 375 for 1-1/2 hours, until internal temperature is 155.
- Let stand for 15 minutes before serving.
