Salty Caramel Drenched Double Chocolate Loaf Cake
- Cake:
- 1 2/3 cups flour
- 1/2 tsp baking soda
- 1/2 cup cocoa
- 1 1/3 cups sugar
- 1 1/2 sticks butter
- 2 eggs
- 1 tbs vanilla
- 1/3 cup sour cream
- 1/2 cup boiling water
- 1 cup chocolate chips
- Caramel Sauce:
- 1 1/2 cups sugar
- 1/3 cup water
- 1 1/4 cups heavy cream
- 1 tsp vanilla
- 1 tsp sea salt, crushed until fine
- Cake:
- Preheat oven to 325.
- Beat flour, baking soda, cocoa, sugar, butter, eggs, vanilla, and sour cream. Mix again while adding in a stream of boiling water. Fold in chocolate chips.
- Bake 50-55 minutes. Let cool, then poke holes throughout top.
- Sauce:
- Mix water and sugar in a saucepan over low heat until sugar dissolves. Increase heat to med-high, allowing mixture to come to a boil (approx. 5-7 minutes). Once golden in color, remove from heat and add cream, vanilla, and salt. Turn heat back down to low and stir constantly until mixture is smooth.
- Remove from heat. Let sit at room temperature 2-4 hours. Drizzle over cake.
