Spinach Salad With Blue Cheese And Peaches
- 1 bag prewashed organic spinach
- 2 fresh peaches
- 1 block high quality blue cheese, such as Maytag (about 6 oz. total)
- 1/3 cup finely slivered fresh basil
- 1/2 cup thinly sliced red onion
- 1/2 -3/4 cup chopped toasted walnuts
- Dressing Ingredients:
- 3 T balsamic vinegar
- 1/2 cup olive oil
- 1 1/2 T dijon mustard
- 1 1/2 tsp. sugar
- 1 shallot, finely chopped
- salt and pepper to taste
- Place Spinach, sliced red onion and fresh basil in a large Salad bowl. Wash peaches, and slice in to about 14 slices per peach, discarding pit. Add to salad bowl. Crumble blue cheese over top or salad. Whisk together dressing ingredients until emsulified. Toss salad with dressing and serve.
