Enchiladas A La Sweetness
- 16 oz. canned peeled tomatoes (undrained)
- 6 cloves of garlic
- 1 tsp. pepper
- 1/2 tsp. ground cumin
- 1 cup whipping cream
- 1 lb. sweet Italian sausage
- 3 lb. ground chicken (hamburger could also be used)
- 2 medium onions, chopped
- 1 tsp. Kosher salt
- 1 1/2 tsp. oregano
- 1 1/4 cup grated longhorn cheese
- 3/4 cup grated pepperjack cheese
- 1 1/2 T. cooking oil
- 1 can chopped green chilies (optional)
- 16 small flour tortillas (at room temperature)
- 1/2 cup thinly sliced green onions
- 1 small tomato chopped
- 1 small can sliced black olives
- 1 small can sliced green olives
- Spray 13x9x2-inch baking dish with non-stick spray.
- Into a food processor or blender add onion, undrained tomatoes, garlic, salt, pepper, oregano and cumin. Blend until mixture is creamy. Add blended mixture to saucepan along with the cooking oil. Cook and stir until slightly thickened (about 3 minutes). Stir in whipping cream and set aside.
- Brown ground chicken (or hamburger meat) and sweet Italian sausage in skillet, chopping meat into pieces as it cooks. Drain off fat. Combine meat with 1 cup of sauce and green chilies, stirring to blend. Spoon mixture onto tortillas and roll up. Arrange (seam side down)in baking dish. Pour rest of sauce over the tortillas making sure to cover all tortillas. Cover with foil and bake at 350 degrees for 20 minutes or until thoroughly hot. Sprinkle with cheese mixture and bake uncovered, until cheese melts (about 10 minutes longer).
- To serve, place tomatoes down the middle and then chopped green onions, sliced black olives and sliced green olives.
