Santa'S Favorite White Chocolate Macadamia Cookie
- 1 cup unsalted butter, softened
- 1 cup sugar
- 3/4 cup firmly packed light brown sugar
- 2 teaspoons vanilla
- 1/2 teaspoon salt
- 2 large eggs
- 2 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 2 4-ounce bars Ghiradelli white chocolate, chopped into small chunks
- 1 cup chopped macadamia nuts
- Preheat oven to 375 degrees.
- In a large bowl, beat butter, sugars, vanilla, and salt with electric mixer until creamy. Add eggs and beat well. In separate bowl, mix flour and baking soda. Gradually add flour mixture to butter mixture until well blended. Stir in nuts and chocolate chunks with large spoon. Drop rounded teaspoons onto ungreased cookie sheet. Bake 8-10 minutes, or until edges turn slightly golden in color. Remove from oven, and cool on wire rack 15 minutes.
