Tortilla Soup
- 1 oz. oil
- 3/4 white or red onion, diced
- 1 tablespoon garlic
- 3/4 pounds carrots, chopped
- Tortilla chip strips
- 4 quarts chicken broth
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 5 oz. tomato paste
- 1 1/4 jalapenos (optional)
- 1/2 bunch cilantro, chopped
- salt & pepper to taste
- 1 avocado, cubed (optional)
- 1 cup chicken, shredded
- 1 cup Ranchero cheese, grated (okay to use cheddar cheese)
- 1. In a pot, over medium heat, brown the garlic to medium brown in the oil
- 2. Add onions, carrots, cilantro, and spices. Saute for 10 minutes.
- 3. Add chicken broth and tomato paste. Cook for 30 minutes.
- 4. Blend together in a blender for 2-3 minutes.
- 5. Spoon soup into bowl. Add chicken, tortilla strips, avocado and cheese prior to service.
