Tortilla Soup

  1. 1. In a pot, over medium heat, brown the garlic to medium brown in the oil
  2. 2. Add onions, carrots, cilantro, and spices. Saute for 10 minutes.
  3. 3. Add chicken broth and tomato paste. Cook for 30 minutes.
  4. 4. Blend together in a blender for 2-3 minutes.
  5. 5. Spoon soup into bowl. Add chicken, tortilla strips, avocado and cheese prior to service.
