American Lamb Loin Chops Recipe With Mango Salsa
- 1 teaspoon ground cumin
- 1 teaspoon coarse ground pepper
- 1 tablespoon brown sugar, packed
- 8 Superior Farms American Lamb loin chops, 1 1/4-inch thick
- 1 cup chopped ripe mango (1 large mango)
- 1 tablespoon seeded, chopped fresh jalapeno pepper
- 1 tablespoon chopped fresh mint
- Remove the lamb chops from the refrigerator 30 minutes before cooking. In a small bowl combine the cumin, pepper, and brown sugar. Rub the mixture on both sides of lamb chops.
- In a separate bowl, combine the mango, jalapeno, and mint.
- Heat the grill to medium and grill the chops for about 6 minutes on each side or to desired degree of doneness. Remove the chops to a platter and let them rest for at least 5 minutes.
- Spoon the mango salsa over the lamb chops and serve.
