Sourdough Coffee Cake
- Cake
- 1 cup sourdough starter
- 2 cups flour
- 1 cup sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 teas baking powder
- 2 eggs
- 1/2 teaspoon cinnamon
- 1 cup chopped pecans
- 2/3 cup veg oil
- Topping-
- 1 cup brown sugar
- 1/2 cup melted butter
- 3 teas cinnamon
- 3 teas flour
- combine cake ingredients and pour into an 13x9x2 pan sprayed with cooking spray. In a separate bowl, combine topping ingredients and swirl gently into cake batter. Bake at 350 for 35-40 minutes (less if convection).
- Note: while warm, you may choose to top with a glaze of 1 c conf sugar mixed with 2 tablespoons milk or water plus a dab of vanilla.
