Smoky Scalloped Potatoes
- 4 tbsp butter
- 2.5 to 3 lbs russet potatoes, sliced 1/4" thick
- 1 lg onion chopped
- 4 cloves garlic minced
- 1 to 2 tbsp flour
- 1tbsp smoked paprika
- 1 tbsp smoked kosher or sea salt
- 2tsp pork chop seasoning
- 2 tsp black pepper
- 3cups half and half
- Grated Sharp white cheddar, 1 cup
- Grated Smoked Gouda 1 cup
- Grated pepper jack cheese 1 cup
- Melt 3 tbsp butter in large saute pan until foaming, add onion and saute for 3 mins. Add garlic, saute 1 min. Add flour and cook till browned. Add seasonings and stir until encorporated, remove from heat and add half and half slowly, whisking as you add. Put in potatoes and bring to boil, reduce and simmer for 5 mins or until thick. Place half potatoes into 9 x 13 pan buttered to prevent sticking. Top with half of the 3 cheeses. Repeat with remaining potatoes and cheeses. Cover and bake at 350 for 45 mins. Remove foil and bake additional 15 mins to brown, remove and let stand for 15 mins before serving. Can be assembled 1 day ahead.
