Salmon Loaf

  1. Drain salmon; save liquid.
  2. Flake salmon.
  3. Heat milk.
  4. Add breadcrumbs and butter or margarine.
  5. Let stand 5 minutes.
  6. Add salmon liquid and beat until smooth.
  7. Add egg yolks, green pepper, onion, lemon juice, pepper and salmon; mix well.
  8. Fold in egg whites.
  9. Pour into a well-greased 1 1/2-quart loaf pan.
  10. Bake at 350u0b0 for 40 to 50 minutes or until firm in center from oven and let stand 5 minutes.
  11. Loosen from sides of pan with a spatula and invert on a serving platter.
  12. Serve plain or with a sauce.
