Spicy Shrimp Nibbles
- 2 cans Pillsbury Crescent Rolls
- 2 packages of frozen Green Giant broccoli and cheese ( or 2 cups if you're using the big bag )
- 32 small cooked shrimp ( or 16 cut in half )
- 2 eggs
- 1 package shredded mozzarella cheese ( or 1 cup if you shred your own )
- 1/2 cup grated sharp cheddar cheese
- Cajun spice
- 1)Preheat oven to 400
- 2)Cut crescents in 1/2, roll into balls and press into greased MINI muffin tins, like a pie crust.
- 3)Mix thawed broccoli and cheese, cheddar cheese and eggs in food processor until smooth.
- 4)Place 1 cooked shrimp in each dough lined tin.
- 5)Spoon in broccoli mixture to cover.
- 6)Place in oven for 15 minutes.
- 7)Remove from tins and place on cookie sheet.
- 8)Add mozzarella cheese on top and sprinkle lightly with spice.
- 9)Return to oven for 10 minutes.
- 10) Remove from oven, cool 5 minutes and serve.
