Healthy Chocolate Chip Cookies
- 2 cups (cornmeal, wwheat flour, wheat germ, almond meal, oats, etc - a mix of 2-3 is best for texture)
- 1 tsp baking soda
- 1/2 tsp baking powder
- Pinch of salt (if you want)
- 1/2 cup brown sugar
- 2 tbsp olive or veg oil
- 3-4 oz plain or vanilla fat free yogurt (2/3 of a small container)
- 1 tbsp vanilla extract
- 2 eggs
- I/2 cup nuts
- 1 cup dark chocolate chips
- Mix dry ingredients in a bowl (flours/meals, baking salt and soda)
- In another bowl beat the sugar, oil, yogurt, and vanilla until creamy - add the eggs and beat until combined. Do not over mix.
- Beat in the dry mixture on the lowest setting until just mixed - add nuts and choc chips and fold in.
- Freeze cookie dough for 15 minutes, or refrigerate for 1 hour or longer.
- Pre heat oven to 375 degrees.
- Using non stick cookie sheets, place spoonfuls of cookie dough at least 2 inches apart.
- Bake for 7-9 minutes.
