Poached Salmon With Onion Sesame Sauce

  1. Rub the salmon filets with 3/4 tsp salt and the pepper. Place the water in a skillet and bring to a simmer. Add the salmon and simmer for 3 minutes. Cover tightly and turn off the heat; let sit for 7-8 minutes. Note: if the salmon filets are very large, you may want to simmer for an extra minute and let sit for an extra 2 minutes. Combine green onions, ginger and remaining 1/2 tsp salt together in small bowl. In a small pan, combine peanut and sesame oil and bring just to smoking point. Remove salmon from water and place in serving dish. Scatter the onion ginger mixture on top of fish and pour hot oil over it. The onions should sizzle; otherwise you haven't heated the oil hot enough. Serve at once.
