Minestrone
- 4T EV Olive Oil
- 1 Lg White Onion, diced
- 4 Cloves Garlic
- 2 Med. Carrots, diced
- 2 Celery Stalks, diced
- 1 C. Each cooked or canned, drained & rinsed, pinto,kidney,black and Great Northern beans
- 8 C. Chicken Broth
- 1 C. Yukon Gold Potatoes,diced
- 2 Zucchini Sliced
- 2 red tomatoes, diced
- 4 C. Baby Spinach
- 1/4 Cabbage, sliced
- 2 Chicken breasts, cubed
- Gr. pepper and salt to taste
- Grated Parm. Cheese for topping
- In Lg stockpot over low heat, combine the oil and onions, garlic and diced chicken. Salute until chicken is tender. Remove chicken to be added later. Add carrots and cook three minutes. Add celery,beans chicken broth and cook 20 minutes See above
