New Zealand Anzac Biscuits

  1. Preheat oven to 160c.
  2. Line two baking trays with baking paper.
  3. Place flour, sugar ,coconut and oats in a bowl.
  4. Melt butter and golden syrup in a saucepan over medium heat.
  5. While this is melting, place baking soda in a bowl.
  6. Add boiling water and stir.
  7. As it fluffs up stir into butter mixture.
  8. Quickly pour butter mixture into dry ingredients while still fluffy.
  9. Stir to combine.
  10. Using a tablespoon, roll spoonfuls of mixture into a ball.
  11. Place 3 cms apart on prepared trays.
  12. Flattening them slightly.
  13. Bake 15-20 mins or until biscuits are golden.
  14. Once cool, dip edges of biscuits in melted chocolate (optional).
