Ganny'S Caramel Pie
- 3/4 cup granulated white sugar
- 5 tbl. all purpose flour
- 1/4 tsp.salt
- 2 cups whole milk
- 3 egg yolks, lightly beaten
- 1/3 cup granulated white sugar
- 1 tbl.butter
- 1/2 tsp. pure vanilla extract
- 1 package unflavored gelatin
- 1 baked 9-inch pie shell
- 1/2 cup heavy cream
- 1 tbl. granulated white sugar
- !/2 cup shredded coconut
- Off heat combine 3/4 cup sugar, flour and salt in the top of a double boiler. Mix in the milk and beaten yolks. Place over boiling water without touching it. Cook 10 minutes, stirring constantly. Remove from the heat but leave over the hot water.
- Spread 1/3 cup sugar over the bottom of a small cast iron skillet. Without stirring, move and tilt the skillet till the sugar is melted and turns a dark caramel color; this takes time, then happens quickly. Immediately add all the caramel to the warm milk mixture, stirring to blend. Stir in the butter and vanilla extract; set aside.
- Dissolve the gelatin in water according to the package directions. Into the gelatin stir 3 tablespoons of the still warm caramel mixture, then mix all back into the caramel. Pour into the baked pie shell.
- Whip the cream with 1 tablespoon sugar until stiff. Spoon it around the edge of the pie filling and dust with grated coconut.
- Serve it warm or chilled.
