Paella
- 4 tablespoon Olive Oil
- 1/2 cup Flour
- 1 Onion, diced
- 1 Carrot, juliene
- 1/2 Green Pepper, juliene
- 1 pound Italian Sausage, cut into 1/2" slices
- 2 cloves Garlic, minced
- 1 can Whole Tomatoes, cut and drained
- 3 cups Rice
- 1/2 teaspoon Saffron
- 3 cups Chicken or seafood stock
- 1/2 Red pepper, juliene
- 3/4 pound Shrimp, tails on
- 3/4 pound Scallops
- 1 pound Lump crab meat
- 12 Clams, muscles or combination
- 1 Lemon, cut in wedges
- 1/4 cup Flat leaf (Italian) parsley, chopped fine
- 8 Boneless, skinless chicken thighs
- Coat chicken thighs in flour. Brown in olive oil. then mostly done Remove to another platter.
- Brown Itallian sausage. Remove to another platter with chicken.
- Saute onion, carrot, green pepper, garlic, untin onions are soft.
- Add tomatoes, rice, saffron and chicken broth. Then chicken thighs, sausage and red pepper. Stir gently.
- Bring to boil. Then cover with tin foil and but in a 350 degree oven for 45 minutes.
- Uncover and add shrimp, crab and shellfish on top. Recover and return to the oven for 15 minutes to cook the seafood. Remove any clams/muscles that have not opened.
