Big June'S Favorite Potato Salad Ala Little June
- 6 medium size potaoes ( all kinds)
- 1/2 cup vegetable oil
- 1/4 cup cider vinegar
- 1 medium onion - chopped ( red onion)
- 2 1/2 tsp salt
- 3 Tb pepper
- 3/4 cup mayo
- 1/4 cup 1/2 and 1/2
- 3 hard boiled eggs - peeled and diced
- 1 cup dices celery
- 1/4 cup sliced stuffed green olives
- cook potatoes until tender ( 20 minutes in jackets) in salted boiling water
- drain, peel, slice or dice
- while potatoes are cooking combine oil, vinegar, salt, pepper, in a jar with a lid - shake and pour over warm potatoes. cover well and chill for 3 hours
- just before serving - mix mayo and cream and pour over potatoes - toss and add celery, eggs , olives, fresh parsley
