White Bean & Turkey Chili
- 1 onion, chopped
- 3 cloves garlic minced
- 1 T. olive oil
- 1 (20 oz) pkg Lean ground turkey
- 1 1/2 t. chili powder
- 1 1/2 t. ground cumin
- 3/4 t. salt
- 2 (14.5 oz) cans diced tomatoes
- 1 (16 oz) can white navy beans, drained
- 1 bell pepper, diced
- 3/4 c salsa
- Tortilla chips, shredded cheese, sour cream, etc.
- Over medium heat, cook onion & garlic in oil 5 minutes, stirring occasionally. Crumble turkey into saucepan, sprinkle with chili powder, cumin & salt. Cook 5 minutes, stirring occasionally. Add tomatoes, beans, bell pepper and salsa. Bring to a boil over high heat. Reduce heat; simmer uncovered 10 minutes, stirring occasionally.
- Serve with chips, cheese, sour cream, etc.
