Really Simple Welted Spinach
- Italian Turkey Sausage (Foster's Farm Frozen Mild or Hot) 5 each)
- Fresh Garlic (3 Bulbs)
- Olive Oil (Pompeian)
- Margarine (Country Crock)
- Linguine Fini (Barilla)
- Pesto (Buitoni)
- Stewed Diced Tomatoes (Contanida)
- Chives
- Spinach (Popeye 10 oz bag)
- 1.Tomatoes-Drain liquid, then place in nice serving dish (room temp)
- 2.Remove skin from sausage and cut sausage into bite size pieces.
- 3. Heat olive oil( 3 tablespoons) and margarine(2 teaspoons) in skillet
- 4. Add chopped garlic and chives (do over medium heat)
- 5. Add sausage (turn up heat and brown to crispy)
- 6. Prepare pasta as directed (il dente)
- 7. Drain pasta when complete
- 8. Cover sausage with spinach
- 9. Stir sausage and spinach until spinach is welted but not
- limp.
- 10.Push mixture into center of skillet and surround outside with linguine
- 11. Lightly Stir Pesto into Linguine
- 12. Serve from skillet
- 13. Individuals garnish with diced tomatoes for added sweetness
- Takes about 20 minutes
