Really Simple Welted Spinach

  1. 1.Tomatoes-Drain liquid, then place in nice serving dish (room temp)
  2. 2.Remove skin from sausage and cut sausage into bite size pieces.
  3. 3. Heat olive oil( 3 tablespoons) and margarine(2 teaspoons) in skillet
  4. 4. Add chopped garlic and chives (do over medium heat)
  5. 5. Add sausage (turn up heat and brown to crispy)
  6. 6. Prepare pasta as directed (il dente)
  7. 7. Drain pasta when complete
  8. 8. Cover sausage with spinach
  9. 9. Stir sausage and spinach until spinach is welted but not
  10. limp.
  11. 10.Push mixture into center of skillet and surround outside with linguine
  12. 11. Lightly Stir Pesto into Linguine
  13. 12. Serve from skillet
  14. 13. Individuals garnish with diced tomatoes for added sweetness
  15. Takes about 20 minutes
