Snickerdoodles
- 1 cup unsalted butter at room temp
- 1 cup vegetable oil
- 1 1/2 cup sugar
- 1 cup powdered sugar
- 2 large eggs
- 4 1/4 cup all purpose flour
- 1 t baking soda
- 1 t cream of tartar
- 1/2 t salt
- 1 T cinnamon
- 1. In an electric mixer blend at medium speed, butter, oil, 1 cup sugar, and powdered sugar until very smooth. Beat in eggs until well blended, scraping down sides of bowl as needed.
- 2. In another bowl mix flour, baking soda, cream of tartar, and salt. Stir or beat into butter mixture until well blended.
- 3. In a small bowl mix 1/2 cup sugar and cinnamon. Shape dough into 1 inch balls and roll in cinnamon sugar mixture. Place 3-4 inches apart on a parchment lined cookie sheet.
- 4. Bake in a 375 degree oven until edges of cookies are lightly browned. About 14-16 minutes. Transfer cookies to racks and let cool completely
