Battered Prawns With Chili Dipping
- 2 egg whites
- 25g/1oz cornflour
- 50ml/13/4fl oz soda water
- 3 prawns, butterflied
- hot oil for deep frying
- For the dipping sauce
- 1/2 bunch fresh coriander
- 1 garlic clove, crushed
- 1 lemon, juice only
- pinch sugar
- pinch chilli flakes
- 1/2 stick lemongrass, cut into small pieces
- 1. In a clean bowl whisk the egg whites untill stiff.
- 2. In a separate bowl mix together the cornflour and soda water. Fold in the egg whites.
- 3. Dip the prawns into the mix, making sure they are thoroughly coated.
- 4. Heat the oil in a heavy-bottomed saucepan or deep-fat fryer (CAUTION: hot oil can be dangerous. Do not leave unattended). Deep-fry the prawns for two minutes until golden, and drain on kitchen paper.
- 5. For the dipping sauce, put the coriander, garlic, lemon juice, sugar, chilli flakes and lemongrass in a blender and blend until smooth.
- 6. Serve the prawns with the dipping sauce.
