Kolokithakia With Taziki
- 4-6 young zucchini
- Greek EV olive oil
- salt
- pepper
- oregano- pref Greek
- cumin powder
- 1 qt organic whole milk yogurt
- (or Greek strained yogurt)
- 1 cucumber (peeled and seeded)
- 6 garlic cloves
- Slice zucchini on a mandoline lenghtwise into medium thick slices. Season slices with salt, pepper, oregano, and cumin powder. Drizzle extra vergin greek olive oil over all slices and let marinade for 1 hour.
- Grill over medium heat.
- TO MAKE -Tsaziki-
- Drain yogurt in a pillow case or tea towel over a large bowl for 4-5 hours. Discard the accumulated whey. In a food processor, or by hand grate one peeled and seeded cucumber. Place flesh in a towel and squeeze to remove all excess water. Combine yogurt, cucumber, 6 cloves of garlic (pressed), salt and 3 tbs of olive oil. Keep refridgerated until needed. Best if made the day before.
