Oyster Dressing
- One Loaf of stale French bread
- 2 tablespoons of butter
- 1/2 cup chopped green pepper
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 24 oysters
- 1 cup of oyster water
- 1 teaspoon of Tabasco
- 1 teaspoon of coarse black pepper
- 1/2 teaspoon of Lea & Perrins
- 1 teaspoon salt
- 1/3 cup of toasted pecan pieces
- 1/3 cup of green onions
- Soak the French bread in water. Remove as much water as possible. Melt the butter in a pan and saute the green pepper, celery and onion until opaque. Add 2 cups of bread, oysters, oyster water, Tabasco, coarse black pepper, Lea & Perrins and salt. Reduce by 1/2 over high heat, until it stand on its own as dressing. Top with pecan pieces and green onions
