Curry Chicken And Rice
- 1 whole chicken (size optional)
- 1 box minute rice
- 1 16 oz. chicken broth
- 1 stick butter or margarine
- 1 box lipton chicken noodle soup mix

- begin by pouring chicken broth and 2 cups water in stock pot, set to boil. Add salt for taste, then boil cleaned whole chicken for 1 hour. Remove chicken and set aside to cool for about 30 minutes. When cooled pull apart all meat and shred to taste. Add 4 cups of rice to boiling water remaaining in pot. Add both envelopes of liptons soup mix. Let boil for about 15 minutes and then add all chicken. Continue cooking for about 10 minutes until all liquid is absorbed. Add about 3tbsp. of curry to mixture. Then bake all in baking dish for about 30 minutes at 375 degrees. Add butter chunks to the top of casserole to melt. Bon Apetite!
