Lite Jambalaya
- 1 lb. chicken breast, boneless, skinless and cubed
- 1 lb. turkey sausage
- 6 oz. frozen shrimp
- 1 Tbsp. butter
- 1 c. onions, chopped
- 3/4 c. green peppers, chopped
- 2 cloves garlic, crushed
- salt and pepper to taste
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground cloves
- 1 qt. chicken broth
- 1 qt. water
- 1 1/2 c. rice
- 1/4 tsp. cayenne pepper
- In a heavy pan, saute chicken cubes, butter, onions and garlic until chicken is thoroughly cooked.
- Add sausage, salt, pepper, nutmeg and cloves and simmer on low heat for 3 to 5 minutes.
- Add chicken broth and water and bring to a boil.
- Stir in rice; lower heat and simmer, covered, for 20 minutes or until rice is tender and most of the liquid is absorbed.
- Stir in shrimp and let them get hot.
- Pour into serving dish with cayenne pepper.
- Serve hot!
