Giant Chocolate Chippers
- 1 c. sugar
- 1 c. firmly packed brown sugar
- 1 c. margarine or butter, softened
- 1 c. oil
- 1 egg
- 2 tsp. vanilla
- 3 1/2 c. all-purpose or unbleached flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 1 tsp. salt
- 1 c. quick cooking rolled oats
- 1 c. coconut
- 1 c. crisp rice cereal
- 12 oz. pkg. (2 c.) chocolate chips
- Heat oven to 350u0b0.
- Line cookie sheets with foil.
- In large bowl, beat sugar, brown sugar and margarine until light and fluffy. Add oil, egg and vanilla.
- Beat well.
- Lightly spoon flour into measuring cup.
- Level off and add flour, baking soda, cream of tartar and salt.
- Stir in oats, coconut, cereal and chocolate chips.
- Press scant cup of dough into a 6-inch circle on foil-lined cookie sheet.
- Repeat with remaining dough, placing cookies at least 2 1/2 inches apart.
- Bake at 350u0b0 for 18 to 22 minutes, or until light and golden brown.
- Cool completely on cookie sheets to prevent breaking.
- Makes 8 large cookies, 32 servings.
