Malva Pudding

  1. Sponge:
  2. Beat sugar & eggs until thick & smooth
  3. Add jam & stir in
  4. Sieve flour, bicarb & salt
  5. Melt butter & add vinegar
  6. Alternately add butter mix & dry ingredients to the sugar & eggs - mix well.
  7. Bake in an oven-proof dish (not cake tin) for 45 minutes at 180*C
  8. Sauce:
  9. Melt all sauce ingredients to near boiling point.
  10. Pour over sponge as soon as it comes out the oven.
  11. Allow to stand for 10 minutes before serving.
  12. Serve with whipped cream or vanilla ice cream.
