Gluten Free Cornish Fairings
- oz birch sugar (xylitol)
- 8 oz chestnut flour
- 4 tbsp pure maple syrup or birch syrup
- 1/2 tsp sea salt
- 2 tsp baking powder
- 2 tsp bicarbonate of soda
- 2 tsp mixed spice
- 3 tsp ground ginger
- 1 tsp cinnamon
- Sieve together the chestnut flour, sea salt, spices, baking powder and bicarbonate of soda. Rub in the butter, and add the birch sugar (xylitol). Spoon the maple or birch syrup in to a cup, stand in shallow water in a pan and heat gently until soft.
- Pour the liquid syrup onto the other ingredients and work in thoroughly. With floury hands, roll the mixture into small balls and place on a greased baking tray, well spaced out. Bake at 400F, moving the biscuits from the top to the bottom shelf of the oven the moment they begin to brown.
- Remove to a rack.
