Grilled Shrimp With Cilantro Sauce
- Shrimp:
- 1 lb shrimp, minimum 20-32 count, peeled, deveined & tails removed
- smoked paprika
- salt & pepper
- Cilantro sauce:
- 1 1/4 Cups (packed) fresh cilantro
- 1/2 Cup olive oil
- 5 tbsps white wine vinegar
- 3 garlic cloves, peeled
- 2 tsps ground cumin
- 1 tbsp chilpote adobe sauce
- Cilantro sauce:
- Combine all ingredients in a food processor/blender. Blend until almost smooth. Season with salt & pepper.
- Shrimp:
- Place shrimp on skewers. Season with paprika, salt & pepper. Grill on med-high heat, approximately 2-3 minutes per side, brushing each side with a light coating of cilantro sauce.
- Place 3 tbsp cilantro sauce in bottom of serving dish. Remove shrimp from skewers atop cilantro sauce and toss lightly.
- Serve warm.
