Quick Foccacia
- 3/4 c warm water
- a 1/4 oz fast acting yeast pkg (2 1/2 tsp)
- 1/2 tsp sugar
- 2 c all purpose flour
- 1 tsp table salt
- 1 Tbsp parmesan
- 2 tsp chopped fresh rosemary
- coarse salt to taste
- Lightly grease a 13x9x2 baking pan.
- In a bowl stir together water, yeast, and sugar. Let stand til foamy (about 5 min). In a small bowl stir together flour and table salt and gradually stir in yeast mixture until it forms a soft dough. On a lightly floured work surface with floured hands, knead dough5 min or until smooth and elastic. Shape into a ball. Invert a bowl over the dough and let rest for 10 min.
- On a lightly floured work surface roll out dough into a 13x9 rectangle. Transfer to baking pan and press into corners. Let dough rise, covered loosely with plastic wrap, in a warm place for 30 min or until doubled in bulk.
- Preheat oven to 400F.
- Sprinkle dough with parmesan, rosemary, coarse salt and pepper to taste. With lightly oiled fingertips press indentations into the dough about 1/4 inch deep and 1 inch apart. Bake in the oven for 20 min or until golden. Cool in pan on a rack.
