Lemon Bars
- 1-1/2 cups Flour
- 3/4 cup Butter
- 3 tablespoon Sugar
- 2.9 ounces Lemon pie filling (pudding) small package
- 1 envelope Knox Gelatin
- 1 cup Sugar
- 2 tablespoons Lemon juice
- 3 Egg Yokes
- 2-1/4 cups Water
- 1 teaspoon Lemon Rind
- 1 tablespoon Butter
- 3 Egg Whites
- 1 envelope Dream Whip
- Crust: Combine flour, butter, sugar and press into 9x13 pan. Bake crust at 350u0b0F 20-25 min. Cool.
- Filling: Combine Pie filling, Knox gelatin, sugar, lemon juice, egg yoke (save whites), water in saucepan. Cook to full boil. Add lemon rind and butter. Chill filling.
- Prepare Dream Whip as directed on box and chill.
- Beat egg whites until stiff peaks form. Fold into Filling mixture.
- Save approx. 1 cup of Dream Whip, fold in remainder to filling.
- Pour lemon filling onto crust and chill.
- Frost with thin layer of remaining Dream Whip.
- Keep chilled.
