Doy'S Pumpkin Pie(Makes 2 Pies)
- 2 eggs, slightly beaten
- 1 (16 oz.) can pumpkin
- 3/4 c. sugar or 1 c. brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1 (13 oz.) can evaporated milk or 1 2/3 c. half and half
- 2 tsp. vanilla
- 1 unbaked pie shell (9-inch with high, fluted edges) or 2 medium-size pie shells
- Preheat oven to 425u0b0.
- Mix filling ingredients in order given. Bake for 15 minutes.
- Reduce heat to 350u0b0 and bake for 45 minutes or until ice pick inserted in middle comes out clean.
- Garnish. Optional Garnishes:
- Whipped topping and chopped nuts or crushed peanut butter and 1/4 cup brown sugar or 2 tablespoons melted oleo or graham cracker crumbs mixed with melted oleo or Mandarin orange yogurt or plain whipped topping.
