Mimi'S Rum Cake
- 1 Box Duncan Hines "Butter Recipe" Golden Cake Mix
- 4 eggs, beaten slightly
- 3/4 cup dark rum
- 1/4 cup water (added to rum)
- 1/2 cup Wesson Oil
- 1 regular sized Vanilla pudding mix (not instant)
- 1/2 cups walnuts
- 1/2 stick of butter
- 1/4 cup dark rum
- 1/2 cup sugar
- Dash of powdered sugar
- Preheat oven to 325
- Blend all ingredients (up until vanilla mix) together first, then beat on high speed for 2 minutes
- Place walnuts in bottom of large bunt pan, and pour batter over. Cook for 45 minutes to an hour, checking for doneness with toothpick.
- While cake is baking, prepare rum glaze (everything after walnuts) to put on cake as soon as it's removed from oven. About 4 minutes before cake should be done, blend ingredients together and bring to boil for 3 minutes (no longer). Immediately drizzle over cake and let sit in pan for 30 minutes.
- Run knife around outer edge and around center stem of pan. Let cook completely, and sprinkle with powdered sugar.
